Versatile Plant-Based Mayos

  • Oil of choice, a can of garbanzo beans (aka chickpeas), dijon mustard, salt + other flavorings.

    Immersion blender

    Tall container for blending

    Ingredients:

    1 can chickpeas

    X tsp dijon mustard

    X tsp salt

    X cup oil

    Directions:

    Open can of chickpeas, drain liquid into a container separating the chickpeas from the liquid. Measure out x cup of chickpea liquid (also called aquafaba). Put it in the container you will blend in. Add the chickpeas, salt and dijon. Blend until frothy. Gradually add oil. Blend til smooth and desired thick ness. Add more oil for thicker mayo.

    Notes:

    The consistency of your mayo will depend on how much oil you use - adjust the oil measurements for desired thickness.
